You don't say what sources you have consulted, any specific dates relating to any of the names you mention, or how you know that the Uriah Coote who married Ann Habbott is the same one as the Uriah Coote who married Elizabeth. In the absence of such information and bearing in mind that given names run in families (see The Inheritance of Single Christian Names) and the even rare names may be held by several people in the same village at the same time (see Right Name, Wrong Body?) it is difficult to give specific advice. Obviously, you should look at the relevant baptism, marriage and burial registers or the 1841 and 1851 census for Flamstead at your nearest LDS Family History Centre if you have not already done so.

I did a quick poke at familysearch in the date period you mention and your query suggests that you may have missed the baptism of George, son of Uriah and Elizabeth Cootes, at Flamstead on 23rd September 1838. Assuming it was an infant baptism (the baptismal register should confirm this) he was born after 1st July, 1837, and you should be able to buy his birth certificate from HALS. This will give you his date of birth and additional information on his parents - including the maiden name of his mother. [George is one of over 50 Coot(e) born in Flamstead listed on the 1881 census CD - but I assume you will have already consulted this widely available source.]

In addition the National Burial Index lists a fair number of Coot(e)(s) buried in the churchyard at St Leonards, Flamstead, including Elizabeth Cootes, aged 32, who was buried on 21st July 1842. Her death certificate should be available from HALS and the 1841 census could well help to confirm whether she was is likely to have been the wife of Uriah and the mother of George.

There is a page reviewing The New History of Flamstead which gives the contact address for advance orders, and they can undoubtedly tell you how many more orders they still need before reprinting. If people don't advance order there is unlikely to be a reprint.
